Ingredients
  

  • 8 pieces bone-in skin-on chicken
  • 2 cups buttermilk
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp hot sauce optional

Flour Coating

  • 2 cups all-purpose flour
  • Cup cornstarch
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper
  • ¼ tsp cayenne optional

For Frying

  • Vegetable or peanut oil for deep frying

Instructions
 

  • Prep Chicken: Pat chicken dry with paper towels for crispier skin.
  • Marinate: In a bowl, mix buttermilk, salt, pepper, and hot sauce. Add chicken, coat well, cover, and refrigerate for at least 1 hour.
  • Make Coating: In another bowl, combine all flour and spices evenly.
  • Dredge Chicken: Remove from marinade, coat in flour mixture. For extra crunch, double-dip.
  • Fry: Heat oil to 350°F (175°C). Fry chicken in batches for 12–15 minutes, turning halfway.
  • Rest & Serve: Let rest on wire rack 5–10 mins before serving.
