- 2 tbsp Olive oil
- 1 Onion diced
- 2 Carrots chopped
- 2 Celery stalks chopped
- 3 Garlic cloves minced
- 4 Medium potatoes diced (optional)
- 1 can 14.5 oz Diced tomatoes
- 4 cups Vegetable broth or Chicken broth
- 1 tsp Fresh thyme or rosemary
- Salt and pepper to taste
- 1 cup Spinach or kale optional
- ½ cup Pasta or beans, optional
Sauté the vegetables: In a large pot, heat olive oil over medium heat. Add onions, carrots, celery, and garlic. Sauté for 5-7 minutes until softened.
Add broth and tomatoes: Pour in vegetable broth and add diced tomatoes. Stir well and bring to a boil.
Simmer: Reduce heat to low and let the soup simmer for 25-30 minutes, until vegetables are tender.
Season: Add thyme, salt, and pepper to taste. You can also add spinach or kale during the last 10 minutes of cooking.
Optional Add-ins: If adding pasta or beans, stir them in during the last 10 minutes of cooking. Adjust consistency with more broth if needed.
Serve: Ladle soup into bowls and garnish with fresh herbs or grated Parmesan. Enjoy!
