Prep Ramekins: Preheat oven to 450°F (230°C). Grease 4 ramekins with butter and dust with flour. Tap out the excess.
Melt Chocolate & Butter: Place chocolate and cold butter in a bowl over simmering water. Stir until smooth, then remove from heat.
Whisk Eggs & Sugar: In another bowl, beat eggs and egg yolks until pale and doubled. Gradually add both sugars, salt, and vanilla.
Combine & Fold: Gently fold the melted chocolate into the egg mixture. Sprinkle in flour and fold just until combined.
Bake: Pour batter evenly into ramekins. Bake for 10–11 minutes, until edges are set and centers are soft.
Serve: Cool for 1 minute. Loosen the edges with a knife and invert onto plates. Dust with powdered sugar and enjoy!
For a super gooey center, bake until just set—don’t overbake!
Add a scoop of ice cream or berries for extra flavor.
Batter can be made ahead and kept in the fridge for 24 hours.
